Creating Black Kettle invited me an opportunity to ask some deeper questions. What were my roots? What do I love to cook? I’ve always loved broths, soups, sauces—that’s where the culinary magic was. I love the economy of a soup or stew! One pot, all the vitamins and health stays in the pot—so smart and delicious!
One of my biggest challenges as an owner and employer is to create a culture of excellence with my small staff and to remind every position that though we are toiling for income, sure, we are in the service and hospitality vocation.
As a restaurant owner, I am a servant to my patrons and my community. So recently we hosted a special night of music and cuisine for the local Kiwanis chapter that serves children as their focus of charity. We raised funds for their FORKS program which is designed to provide food for kids during the weekends when their weekday assistance isn’t available. Our “Summertime” menu was in full bloom and upscale rustic cuisine warmly embraced.
From Drover to Springs Landing… We are located on top of a hill in Poplar Springs, so our new name is: Springs Landing, fine country pub! It’s taken awhile, but we’ve finally landed.
